Here is a very easy and super delicious recipe for Fava beans, courtesy Mollie Katzen:
Roasted Beans with Garlic and Olives
3 Tbsp extra virgin olive oil
1 lb fava beans (you can add in frozen lima beans to make 1 lb)
6 large cloves garlic, peeled and quartered lengthwise
1 heaping cup green olives, pitted and sliced
1-2 Tbsp minced fresh herbs (summer savory, thyme, marjoram or sage)
salt and pepper to taste
Preheat the oven to 375. Spread 2 Tbsp of the olive oil into a 6×9 inch baking pan or an oval gratin pan.
Toss everything together in the pan and sprinkle with a little salt and pepper. Cover the pan tightly with foil. Bake for 50 minutes or until the garlic is tender when pierced with a toothpick or fork. Transfer to a bowl and stir. If you like, you can toss with a little more olive oil and add more salt and pepper to taste. Serves 6-8, depending on what else you are having!
